"Aliments funcionals" / "Functional foods"

Avui he assistit a un dels seminaris que em toca escoltar per poder obtenir el títol del master. Aquest seminari en concret ha estat organitzat per estudiants de diferents estudis dintre de la facultat de "Life Sciences". Com a tòpic han escollit els anomenats "functional foods" (més info aquí).

Tot i que la definició no està gaire clara si que hi ha uns punts de consens sobre què són els "functional foods": 1) ha de ser menjar, i part d'una die
ta normal, 2) ha de tenir efectes favorables clars en el funcionament del cos, més enllà dels seus valors nutricionals, donant com a resultat una millora de la salut, benestar i reducció del risc a patir una malaltia, 3) els efectes favorables del producte s'han d'haver demostrat suficienment. Hi ha tres tipus: els aliments fortificats (per exemple se'ls hi afegeix VIT C), els pro-prebiòtics (rollo Yakult) i els bioactius (com els que tenen el pèptid C12, que ajuda a reduir la pressió arterial, o els antioxidants). En el seminari, que ha durat unes 4h, hi han assistit tan experts en el camp científic, com representants de la indústria alimentària (Unilever en concret), com representats d'institucions públiques lligades al camp. Cada un ha fet la seva "charla" i al final hi ha hagut un debat, en el qual es presentaven unes preguntes al públic, que deia si estava d'acord amb elles o no.
La primera pregunta ha estat: en el futur, els "functional foods" jugaran un paper important en la millora de la salut i la optimització de l'estat físic?. Aquí la resposta ha estat per a tots els gustos. Mentre els estudiants mostraven el seu esceptiscisme el representant d'Unilever apostava per un SÍ ben clar. Al·legant que cada cop la gent té menys temps per cuinar-se i dedicar temps a tot el que és menjar sà i fer exercici...i jo em pregunto: no serà aquest el problema? Realment calen menjars innovadors per poder mantenir un dieta equilibrada i mantenir-nos sans? I com s'ho feien els nostres avis i besavis, pobres...
I això porta a la següent pregunta que s'ha reali
tzat: les companyies estan millorant la salut pública més que el propi govern?. Aquí la gent ja ha dubtat més, hi havia més defensors del sí. L'argument ha estat que al cap i a la fi les companyies són les que decideixen quin menjar tenim disponible i quin no, i que venent productes beneficiosos per la salut doncs milloren la salut pública, en canvi els governs no.
És cert que ells saben vendre el producte: si menges X et sentiràs millor, més lleuger i content amb tu mateix (és el que volem sentir, no?). En canvi els governs només saben dir: menjar cada dia una mica de tot, 200gr de verdura, 2L aigua, etc. Això no ven, estar clar.

Bé, jo faré servir el mateix argument en contra seva. En els últims anys la obesitat en els països desenvolupats ha augmentat de forma considerable i actualment les malalties cardiovasc
ulars són la primera causa de mort. En els últims anys la dieta típica mediterrània s'ha vist pervertida per nous productes que aquestes mateixes companyies han posat al mercat (Unilever mateix ens ven la margarina Becel amb esterols vegetals que redueixen el colesterol mentres ens ven els gelats Frigo coneguts per tots, per exemple). Per tant, tal com diuen, ells manen, en certa manera, en el que mengem. Què li queda al consumidor? EDUCACIÓ i SENTIT COMÚ. Hi ha molta gent que no sap què és un proteïna, un polisacàrid, un aminoàcid o un greix saturat i tampoc en saben les funcions en el nostre cos o quins aliments (els de tota la vida, sense tractaments) tenen aquests components. Jo personalment penso que si tothom tingués un mínim de coneixement, la dieta del personal milloraria considerablament i tots aquests productes que ens fan creure que necessitem ja no tindrien sentit. De fet, molts d'aquests aliments són versions "renovades" de menjars de tota la vida que s'han deixat de banda. No sé perquè la gent prefereix beure una cosa xunga en un pot de plàstic per obtenir VIT C enlloc de menjar un kiwi, per exemple.

Michael Pollan diu: "Si estas preocupat per la teva salut, potser hauries d'evitar els productes que diuen que són beneficiosos per la teva salut. Per què? Doncs perquè un aliment amb un anunci reclamant beneficis per a la salut és una indicació clara de que no és realment menjar, i menjar és el que tu vols menjar". Segons ell, com més ens preocupem per la nutrició, menys saludables semblem esdevenir.

Per tant, ull amb el que et vénen, pren-te temps per cuinar i menjar sà i fes servir el sentit comú! (també conegut com la dieta de l'àvia). "

Today I've been to one of the seminars that I need to attend to get my master degree. This one was organized by students of the different master degrees of "Life Sciences". As a topic they chose "functional foods" (more info here).

Tough there is not a clear definition there are some consensus points about what "functional foods" are: 1) It must be food, and part of a normal diet, 2) it must have advantageous effects on body functions beyond its nutritional value, resulting in an improvement state of health/well-being and/or reduction of risk of diseasea, 3) the beneficial effects of a functional food must have been proven sufficiently. There are 3 groups: fortified foods (for instance with added VIT C), pro-prebiotics (such as Yakult) and bioactive foods (like the ones with peptid C12, that helps to reduce blood pressure, or antioxidants).
In the seminar, which has last 4h, there were invited experts in the scientific field, representatives of corporations (in this case Unilever) and experts from public institutions related to this field. Each of them gave a speech and finally there's been a debate, where some statements have been presented to the public there, who had to agree or disagree with them.
The first question has been: in the future, the functional foods will play a major role in improving our health and the optimization of fitness?. Here the opinion has been quite diverse. While students showed their sceptiscim the guy from Unilever strongly agreed with it. He said that people have less and less time to spend time on taking care of the diet or doing exercise...and I ask to myself: isn't it the problem maybe? Do we really need innovated foods to have a balanced and healthy died and keep ourselves healthy? Then, how did our grandparents or great-grandparents managed, poor them...
And that brings me to the second question asked in the seminar: are the companies improving public health better than the governments? Here people has hesitated a little bit more, but more people agreed. The argument was that whether we like or not companies are the ones who decide which foods are available and which not, and therefore, by selling healthy stuff to us they improve public health, and the governments don't do that.

True, they know how to sell: if you eat X you'll feel better, lighter and happy with yourself (that's what we want to hear, isn't it?). But the governments only say boring stuff: eat a little bit of everything, 200gr vegetables, 2L water, etc. This clearly doesn't sell.
Well, I'm gonna use this argument against them. The last years obesity has increased in developed countries and nowadays cardiovasculars diseases are the first cause of death.
The last years the typical mediterranean diet has been perverted by new products that these companies themselves have put in the market (Unilever itself sells us Becel margarine with plant sterols which reduce colesterol, but in the meanwhile they sell us those great Ola icecreams, for instance). Therefore, as they say, they are controlling, in some way, what we eat. What's left for the consumer? EDUCATION and COMMON SENSE. There is a lot of people who don't know what a protein, polisacharid, aminoacid or satured fat is. And they do not know either the function of them or in which foods (normal ones, whithout treatment) they can be found. I personally think that if everybody had a little bit of knowledge the personal diet would improve and all those products that they tell us we need would not make sense anymore. Actually, those foods are "renewed" versions of foods known for ages that we forgot about. I don't understand why people prefer drinking a strange stuff in a plastic bottle to get VIT C than getting it from a simple kiwi, for instance.

Michael Pollan says: "If you’re concerned about your health, you should probably avoid products that make health claims. Why? Because a health claim on a food product is a strong indication it’s not really food, and food is what you want to eat". According to him, as much we worry about nutrition, less health we seem to become.


So, keep eyes open on what they try to sell you, take your time to cook and eat healthy and use common sense! (also known as grandma experience).

Hem de trobar temps per cuinar i sobretot per menjar bé. Si a sobre ens treuen un dels millors plaers com és seure a taula i menjar... Ens prenen el pèl amb productes que no sabem ni què porten.
i ara que hi penso, o em vaig a fer el dinar o avui no dino jeje
